As promised earlier here is our favorite Taco Tuesday recipe... make them tonight!! (There is an accompanying Pickled Onion recipe to add as garnish to be made in advance)

Crispy Ground Pork Tacos

Things you Need....

Quick Mexican Pickled Onions
1 cup thinly sliced red onion (1.2 lg onion)
2 Tbsp lime juice (1 line)
1 Tbsp red wine vinegar
1 tsp salt
1 tsp granulated sugar, honey or agave.

Assemble in a mason jar, shake and set aside till service.

Ground Pork Tacos
1-2 tbsp olive oil
1/2 small yellow or red onion diced
2 cloves minced garlic
1 lb ground pork
1 tsp EACH of cumin, and salt
1/2 tsp EACH of garlic powder, onion powder and paprika
1/4 tsp dried oregano
1 tbsp honey or agave
2 tbsp lime juice
8 6 inch flour or corn tortillas

Toppings: queso, cotija cheese ( I use feta) avocado either smashed or sliced, chopped fresh cilantro and the pickled red onion, some finely chopped romaine for extra crunch and texture

Heat the olive oil in a large skillet over medium heat. Once hot add onion and saute for about 2-3 minutes until tender and translucent. Add minced garlic and cook another 1-2 minutes until fragrant.
Push the onions and garlic to the side in the pan and add the ground pork. Break apart the pork as it cooks, eventually combining with onions and garlic until there is no pink remaining.
When the pork is almost done, let it sit in the hot pan, without stirring for 2-3 min so the pork can get crispy, repeat 1-2 more additional times until it becomes as crispy as you like it (side note - don't rush this process, this is what makes them more delicious!)
Turn the heat down to medium low and add the seasonings and honey. Continue to cook until completely combined.
Remove from the heat and stir in lime juice.

Serve in the tortillias topping with your choice of above mentioned accompaniments
