Healthy Veggie Rolls with Peanut Sauce
8 rice paper wrappers 1/2 cup of shredded red cabbage 1 carrot julienned 1 cucumber julienned 1/2 avocado sliced fresh mint and cilantro leaves 1/4 cup peanut butter 2 tbsp soy sauce 1 tbsp lime juice 1 tsp maple syrup
Directions Prepare all the veggies as described and arrange on a plate for easy assembly Dip the rice paper wrappers in warm water, one at a time, for 10 seconds and lay flat on a clean surface Arrange mint, veggies, avocado and cilantro in the centre. Roll tightly like a burrito. Repeat with remaining wrappers.
For the peanut dipping sauce, whisk together peanut butter, soy sauce, lime juice, add maple syrup until smooth. Add water to think if necessary.
