Here is one of our family favourites and is quick to put together when you need dessert in a hurry. Although not baked in the oven, since they are cookies - we still consider it baking!
Chocolate Oatmeal Coconut Stovetop Cookies (some people call them Haystacks)
INGREDIENTS
2 cups sugar 5 Tbsp cocoa 1/2 cup milk 1 cup butter 1 tsp vanilla 3 cups quick oats 1 cup flaked sweetened coconut
INSTRUCTIONS
In a saucepan over medium heat, combine sugar, cocoa, milk, and butter.Heat to rolling boil, stirring often. When a boil is reached, cook for 4-5 minutes, stirring constantly.
Remove pan from heat and quickly mix in vanilla, oats and coconut until incorporated.
Drop by tablespoonfuls onto parchment-lined cookie sheet. Let cool until set, about 10 minutes.
