With Summer Solstice upon us, we will post a summer salad recipe a day for the next 7 days.
Here is your first one!
Zesty Lime Shrimp and Avocado Salad
1 pound cooked, peeled and chopped jumbo shrimp
1/2 cup chopped red onion
1 diced tomato
1 diced avocado
1 tsp extra-virgin olive oil
juice of 1 lime
1/4 tsp salt
1/8 tsp black pepper
Toss all ingredients together and enjoy

With the onset of spring and warmer days ahead I find myself craving salads. Next Friday is Good Friday, and one of the busiest days for fish and chips.
We are having extended family over and ordering in so we have been busy doing some taste comparisons.
We tried the new Halibut House, Wimpy’s , AngelsDinner and Golden (no photo)😂
The winner for me was Wimpy’s,(left side of plate) Dan was Golden

Beef Ribs make a great dinner and because they are on the bone gives that extra beefy flavour. Start off with using a slow cooker and I usually cook them on high for about 6.5 to 7 hours. Once that is completed then its finished in the broiler on high for about 3 minutes per side. You can slather them with any BBQ sauce of your choice or just salt & pepper.

I am feeling salad tonight. I pulled this favourite from our "family" cookbook, Meah created a few years back. (I will reference this book ALOT!).This salad is tried and tested, I skip the tarragon.
We have avocado and strawberries on hand (on sale at Zehrs for $1.99), we always have spinach because we use it in smoothies, and we often simply use the frozen cooked chicken strips from Costco. These are a staple in our house!!
